Lemon Loaf Recipe

This is a great lemon loaf for every day lunch boxes, morning teas, and similar. Does not do overly well in fan bake oven apparently. This was submitted by Vanessa Liddell
- 100g Butter
- 1 Cup Caster Sugar
- 2 Eggs
- 1 Cup Self-Raising Flour
- ½ Cup Flour
- ½ Tsp Salt
- ½ Cup Milk
- Rind off one Lemon
Topping
- ¼ Cup Caster Sugar
- Juice of one Lemon
Instructions
- Add butter and sugar together and beat until creamy.
- Add eggs one at a time, beating quite well between each one.
- Add sifted flour (normally I use Self-Raising flour and add 1 heaped teaspoon of baking
powder). - Add salt, milk and rind of one lemon
- Put into a greased loaf tin with a lining in the bottom,
- place in a hot oven at 180 degrees for 45 minutes.
Topping:
- Mix Caster Sugar and lemon together until dissolved (I
usually put in more juice from another half lemon). - Pour over cake when you take it out of the oven (should be quite hot).
Cooking time (duration): 1 Hour

Oh can't wait to cook this, just had some the other day yummy, actually it's great toasted!

I had some trouble getting it out of the pan, and it took a bit longer to cook through than 45 mins. The timeing could be due to cooking 2 at the same time, and i used a fan forced oven. The sticking was to a silicon loaf pan and probably because i never greased it, and poured on the sticky topping whilst it was in the pan (it went down the sides).
Very crumbly when i got it out, possibly because its so fresh! but oh it tastes to yummy!! amazing! Left it to cool properly and hopefully it will stick together better by morning so the kids can take some to school. I have eaten the better part of a loaf already

Yeah silicon bake ware has no stomach muscles but it looks yummy, will bake mine then compare pics, (not that i'm competitive)

I love silicon bakeware, its fantastic to work with. I just forgot to butter+flour it and it was a very soft wet mixture so sticky plus I had the 'icing' on it whilst in the tin so it didnt go everywhere.
Once it was out of the tin and cooled down it was sticking together fine and sat just nicely! see Photo that Ive now uploaded
